Method

  1. Slice up the halloumi into thin slices.
  2. Crack an egg into a bowl and whisk.
  3. Place whatever cereal you're using for your breadcrumbs into a blender and blitz until fine.
  4. Chop up your potatoes into chips, place them in a bowl, drizzle with oil and add 1 teaspoon of smoked paprika, 1 teaspoon garlic powder, and plenty of salt and pepper.
  5. Place them in the air fryer for 12 minutes on 200 degrees or in the oven for 30/40 minutes on a baking tray. Chips should be golden all over.
  6. Finely slice your onion and fry these in oil until super crispy and golden.
  7. While they're both cooking, dip halloumi slices in egg then into your blended cereal and set aside ready to air fry. (You can also shallow fry these with oil in another pan too if you don't have a double tray air fryer or don't want to wait for chips to finish cooking).
  8. Air fry your halloumi for 8 minutes on 200 degrees or shallow fry in oil for 10 minutes.
  9. Add Chinese cooking sauce to a jug and heat up in the microwave.
  10. Finely chop your fresh coriander and spring onions.
  11. When chips are cooked, add them to bowls. Drizzle with curry sauce, place halloumi and crispy onions on top. Layer coriander and spring onions over and drizzle hot sauce over everything.
